The first step when making Kotleti is to mix together your bread crumbs (for which I used a mix of oats and crumbled Josheph’s pita toast) and your liquid. Let it them sit together and soften for 5-7 minutes.

After they are soft, add in your spices: salt, pepper, diced onion, and anything else you desire (we often add dill, and sometimes garlic, but the original recipe we started with is just salt, pepper, and onion). Mix in your ground chicken, eggs, and Greek yogurt (sour cream is awesome here!).

Once you have mixed well, make patties out of the mix; it will be incredibly moist and not hold a shape well. That’s okay — it’s supposed to be this way. Dredge your patties in flour (we ground up some oats and used the oat flour) if you’d like, or don’t — I did some without, too. Fry the patties in a skillet of oil (we used half coconut and half olive) until both sides are crisp and the middle is thoroughly cooked. This takes about 4 minutes on each side. Let them drip just a second before plating.

Super simple, delicious, and actually pretty good as far as healthy goes! Here’s the exact recipe with our THM tweaks in parenthesis (this is an “S” meal, by the way — the little bit of oats used will not swing it out of “S” territory if you keep to one serving)

CHICKEN KOTLETI

Ingredients

  • 2 lbs ground chicken
  • 2 cups breadcrumbs (we used 1 1/4 cups Joseph’s pitas, toasted and crumbled, and 3/4 oats)
  • 1/2 cup milk (or 2 TB heavy cream and the rest water)
  • 2 TB sour cream (or Greek yogurt if that’s what you have or prefer)
  • salt and pepper to taste (we like 1 tsp of each)
  • optional: 3 tsp dill, 2 tsp garlic powder or 1 fresh clove minced
  • 2 eggs (or, to add a little nutrition, 1 egg and one “flax egg”**)
  • 1/4 onion, chopped very fine
  • optional: flour for dredging (we used 1/2 cup oats, blended to make a flour). You don’t have to dredge, and it really doesn’t make it all that crispier or add too much flavor. I made 2 patties without this step and no one tasted the difference when I gave them a bite. It just made the patty messier to get into the skillet.
  • Oil for frying (we did a thin layer of 1/2 coconut, 1/2 olive)
